Ingredients

  • 125g butter
  • 500g dark brown sugar
  • 120ml milk
  • 250g crunch peanut butter
  • 1 vanilla pod – seeds scraped out
  • 300g icing sugar
  • Either a square roasting tray 8 x 8 or a larger rectangular one if you would like slightly thinner fudge

Directions

  1. Melt the butter in a pan over a medium heat
  2. Stir in the brown sugar and milk
  3. Bring to the boil and boil for 2 minutes without stirring
  4. Remove from the heat and stir in the peanut butter
  5. Add the scraped vanilla seeds
  6. Pour the fudge mixture onto the icing sugar that is already in a large bowl and beat the mixture until smooth
  7. Spoon/pour into a deep baking tray, allow to firm and cool slightly then place in the fridge to chill.
  8. Cut the fudge into squares  and store in an airtight container
