Ingredients

  • 2 eggs
  • 1 tsp (5 ml) vanilla extract
  • ¼ cup (60 ml) almond milk
  • 2/3 cup (160 ml) oat flour
  • 1 tsp (5 ml) baking powder
  • ¼ tsp (2 ml) salt
  • ½ cup (120 ml) cocoa powder
  • ¾ cup (180 ml) coconut sugar
  • ½ cup (120 ml) coconut oil, melted
  • ½ cup (120 ml) cacao nibs
  • ¾ cup (180 ml) smooth natural peanut butter

Directions

  1. Preheat oven to 350F (180C).
  2. Crack eggs into bowl and beat. Add vanilla, almond milk, baking powder, salt, coconut sugar, melted coconut oil, cocoa powder, cacao nibs and stir to combine.
  3. Stir in oat flour.
  4. Pour brownie batter into prepared dish.
  5. Add peanut butter in spoonfuls.
  6. Run a knife through the batter to create swirls with the peanut butter.
  7. Bake for 20-25 minutes in a greased baking pan.
  8. Cool completely before cutting and serving.
  9. Enjoy!
