Grilled Potato Wedges

Ingredients

  • 4 large Yukon Gold potatoes
  • ¼ cup (60 ml) olive oil
  • 1 tbsp (15 ml) salt
  • 1 tsp (5 ml) ground black pepper
  • 1 tbsp (15 ml) chopped fresh tarragon
  • 1 tbsp (15 ml) chopped fresh dill
  • 1 tsp (5 ml) chopped fresh thyme
  • 1 tbsp (15 ml) chopped fresh chives

Directions

  1. Preheat barbecue to 375-400F (190-205C).
  2. Cut potato into 6-8 wedges lengthwise.
  3. Toss with olive oil, salt, and ground black pepper.
  4. Place on a hot grill. Grill 2-3 minutes per side.
  5. Once nicely charred, reduce heat to medium-low, 250-350F (120-175C).
  6. Close lid and cook for 12-15 minutes.
  7. Remove from grill and toss with tarragon, dill, thyme and chives.
  8. Serve hot with Herb-Stuffed Arctic Char.

Note: Cooking times and temperatures will vary depending on the size and type of your barbecue.
