Ingredients

  • 2 large eggs
  • 1 1/4 cup cider vinegar
  • 1/8 tsp Dijon mustard
  • kosher salt (to taste)
  • white pepper (to taste)
  • 1/4 clove garlic
  • 6 tablespoon vegetable oil

Directions

  1. Combine egg yolk, lemon juice, vinegar, mustard and 1/2 tsp salt in a medium bowl. Whisk
    until blended and bright yellow.
  2. Add the oil to the yolk mixture, while whisking constantly adding the oil a few drops at a
    time.
  3. Gradually add the remaining oil in a very slow thin stream while whisking constantly
    until mayonnaise is thick. This will take about 8 minutes and the mayonnaise will be
    lighter in colour.
  4. Cover and keep chilled for up to three days. You may also wish to add in chopped fresh
    herbs like tarragon or chives.
