Charmoula Couscous

Ingredients

  • ½ cup (120 ml) pistachios, shelled
  • 2 ¼ cups (530 ml) water or broth
  • ½ tsp (2 ml) salt
  • 2 cups (480 ml) couscous
  • 1 tbsp (15 ml) olive oil
  • ½ red onion, sliced thin
  • 2 tbsp (15 ml) charmoula (see recipe)
  • fresh mint leaves, for topping

Directions

  1. Add water to a pot and bring to a boil. Stir in couscous, and take pot off heat.
  2. Cover pot and let stand 5 minutes while water is absorbed.
  3. Use a fork to fluff couscous.
  4. Transfer couscous to a bowl.
  5. Add olive oil, red onion, and pistachios and stir in.
  6. Drizzle with charmoula and top with mint leaves.
  7. Enjoy!
