Ingredients

  • 4 (1.5 lb.) apples (I like honey crisp)
  • 2 tbsp. sugar
  • 1 cup apple cider
  • 1 tsp. lemon juice
  • Knob of butter

Directions

  1. Peel and cut the apple into ¼ inch cubes.
  2. Melt the butter in a sauce pan large enough to hold the apples and cider.
  3. Add the apples, sugar and cider. Add a touch of fresh ginger or vanilla for some added punch.
  4. Simmer gently, half covered until the cider has evaporated and the apples are cooked.
  5. At this stage you can continue to simmer slowly until you reach a paste or jam consistency. Or remove from the stove and purée in a food processor to a butter or smooth purée.
  6. Adjust the acidity with lemon juice when the finished product has cooled.
  7. Tip: Thin with apple juice if over reduced once cooled.
