Ricotta Meatballs with Four Cheese Sauce

Ingredients

Meatballs

  • 2/3 lb (300 g) ground veal
  • 2/3 lb(300 g) of ground pork
  • 1 egg, beaten
  • ½ cup (120 ml) ricotta cheese
  • ½ cup (120 ml) parmesan cheese, grated
  • ¼ cup (60 ml) fresh parsley, chopped
  • 1 small onion, chopped
  • 1/3 cup (80 ml) breadcrumbs
  • 1 tsp (5 ml) salt
  • 1 tsp (5 ml) black pepper
  • ½ tsp (3 ml) ground nutmeg
  • 2 cloves garlic finely chopped

Four Cheese Sauce

  • ¼ cup (60 ml) butter
  • 1 ¼ cups (300 ml) 10% cream
  • ¼ cup (60 ml) gorgonzola cheese. Crumbled
  • ½ cup (120 ml) pecorino cheese, finely grated
  • ¼ cup (60 ml) fontina cheese, finely grated
  • ½ cup (120 ml) parmesan cheese, finely grated
  • pinch of white pepper

Directions

Meatballs

  1. Preheat oven to 375F (190C).
  2. In a large mixing bowl, combine the meat, egg, ricotta, parmesan, parsley, garlic, onion, salt, pepper, nutmeg and breadcrumbs.
  3. Roll the balls (with your hands or using an ice cream scoop) to desired size.
  4. Place the meatballs on a baking tray lined with parchment paper.
  5. Bake for 20 minutes or until golden brown and firm.
  6. Serve immediately with four cheese sauce (see below).

Four Cheese Sauce

  1. Heat frying pan over medium-high heat and melt butter.
  2. Add cream, and bring to a boil.
  3. Remove from heat.
  4. Add 4 cheeses gradually, stirring constantly.
  5. Season with white pepper.
